French Cowboys is a Texas-based boutique hospitality brand and management company. We design and operate beautiful escapes easily accessible from major Texas cities, inviting guests to disconnect from the city and reconnect with what matters most.

Currently, we manage 6 boutique hotels (200 rooms) across the Texas Hill Country, with plans to add 4 more hotels (~200 rooms) across Texas over the next 24 months.

Our 10-year vision is to become the leading operator of boutique hospitality in Texas, spanning hotels, restaurants, bars, concert venues, and beyond.

About the Role

This is a ground-floor leadership opportunity, but it is not for someone who wants to sit behind a desk.

As Food & Beverage Director, you will roll up your sleeves and build French Cowboys' F&B program from the ground up, launching bars, coffee shops, casual food offerings, and over time, full-service restaurants at select properties.

You will be both a strategic leader and a hands-on operator, setting the vision while also jumping in where needed to open properties, train teams, design menus, troubleshoot operations, and evolve systems in real time.

You will work closely with:

  • Hotel General Managers and onsite teams
  • The French Cowboys executive and creative teams
  • Vendors, food trucks, breweries, and chefs

Key Responsibilities

Bar & Café Development

  • Lead the concepting and rollout of new bar and coffee shop offerings, starting with two properties in New Braunfels.
  • Create food and beverage programs that fit each property's character, and drive revenue.
  • Hire, train, and lead opening teams.

Breakfast Program Rollout

  • Design and launch simple, scalable breakfast programs such as coffee, pastries, and grab-and-go offerings.
  • Prioritize low-labor, high-quality operations that can scale across properties.

Creative Food Concepts

  • Develop lightweight food programs such as pool snacks, food trucks, and pop-up kitchens.
  • Create systems that deliver guest value without requiring full restaurant kitchens.
  • Plan and oversee the launch of full-service restaurants as appropriate.

Programming & Events

  • Activate hotel spaces with guest programming like happy hours, tastings, weekend pop-ups, live music, and more.
  • Collaborate with marketing and event teams to build community engagement and drive F&B revenue.

Technology & Systems

  • Implement POS systems, mobile ordering tools, inventory management, and reporting platforms.
  • Ensure seamless integration with hotel operations and financial systems.

Pricing & Revenue Strategy

  • Set and refine pricing strategies to maximize guest satisfaction and financial performance.
  • Use data and feedback to optimize menus and promotions.

Operations & Financial Management

  • Build operational playbooks, vendor partnerships, and inventory controls.
  • Manage labor and COGS with a strong focus on efficiency and guest experience.

Team & Culture

  • Hire, coach, and lead high-performing F&B teams.
  • Instill a service culture rooted in warmth, creativity, and operational excellence.

Qualifications

  • Deep passion for hospitality, guest experience, and entrepreneurial environments.
  • Proven ability to build and scale F&B programs, not just manage them.
  • Strong operational skills in financial management, systems, staffing, and service excellence.
  • Calm and effective under pressure, thrives in fast-paced, growth-oriented environments.
  • Hands-on leadership style with a willingness to jump in and lead by example.
  • Strong communication, organization, and collaboration skills.

Experience

  • 5+ years of F&B leadership experience.
  • Experience working for fast-scaling hospitality companies is preferred.
